Sweet potato casserole is an untypical dessert with a remarkable autumn flavor and scent. Crunchy nut topping and crusty stringy marshmallows create a very interesting texture combined with soft mashed sweet potatoes. This Thanksgiving treat is a perfect hot dessert for cold days.
Use a whisk or a big spoon if you don't have a mixer. Add the liquid ingredients and mashed potatoes gradually. It will be easier to make the texture smooth.
If you don't have any pecans, any nuts will do. The best options you can pick are walnuts, almonds, and hazelnuts.
Don't shy away from spices. Such spices as vanilla, cinnamon, cloves, and cardamon make your casserole fragrant and appetizing.
Roasting sweet potatoes will add extra flavor to your casserole. They will be a bit drier and sweeter. In this case, you will not need to mix the casserole as thoroughly before baking. You can leave the potatoes in the shape of cubes.
Here's why you need to add eggs to sweet potato casserole. It will make the ingredients stick together. Your casserole will be more like a cake but not a porridge.
If you hesitate about whether to cover sweet potato casserole when baking or not, you can try both options. The main difference is that you won't have a crust on the top of the marshmallows if you cover the casserole. Another disadvantage is that the marshmallows might stick to the cover when they melt.

Preheat oven to 350 degrees Fahrenheit.

Spray a baking tray (if it is deep enough) or a baking pan with olive oil.

Boil water in a big pot. Cut sweet potatoes into 1-inch cubes at the same time.

Reduce the heat and put the potatoes into water. Simmer for 15 minutes.

Use a large bowl and a whisk or spoon to mix butter, brown sugar, milk, honey, and eggs. Add vanilla, cinnamon, ground ginger and cloves, and salt to the mixture.
